Ingredients
• 1 1/2 cups wheat bran Preheat oven to 375 degrees. Grease muffin cups with a spray oil or
with butter. In a mixing bowl, combine bran and buttermilk. Set aside and let stand
for 10 minutes. In separate mixing bowl, beat the oil, egg, sugar, and vanilla together.
Add this to the bran and buttermilk. Stir until well combined. Stir together the all purpose flour, baking soda, baking powder and salt.
Stir the flour mixture into the buttermilk and bran mixture until just blended. Spoon the bran mixture into the muffin cups. Bake for approximately 10-12 minutes or until a toothpick inserted in the
center comes out clean. |
Muffin Tip:These wheat bran muffins are quite yummy, but you can also substitute different kinds of bran for different healthy bran muffins. Oat bran is easily found in health food stores and is a sweeter alternative for kids.
