Baileys Brownies – the irresistible treat everyone will love.

Christmas was always my favourite time of year. The tree was always decorated with pretty ornaments, the house was filled with the smells of baking and Christmas music was playing in every hallway. A familiar face was usually waiting for me at the door when I got home from school, and that was my auntie. Auntie was always so excited to give me my Christmas present, which usually consisted of a bag of Baileys Brownies. I loved those brownies! They were my favourite thing to eat on Christmas day, and even more so now that I’m all grown up.

Christmas is a time to be with family and enjoy each other’s company. Even though I live far away now, my aunt and I still phone, email and Facebook each other regularly, and we always make sure to get together for Christmas Eve and Christmas Day. I love the feeling of being surrounded by loved ones, and Baileys Brownies are always a part of that celebratory feeling. Even though my aunt and I don’t live in the same city anymore, we always manage to get Baileys Brownies delivered to each other, which is slightly strange but nevertheless a much loved tradition!

What is the recipe for Baileys Brownies?
Ingredients:
1/2 cup (120 milliliters) vegetable oil
1/2 cup (120 milliliters) white sugar
2 large eggs
1/2 cup (120 milliliters) dark corn syrup
1/2 cup (120 milliliters) Bailey’s Irish Cream
1/4 teaspoon salt
2 cups (250 grams) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cream of tartar
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch square baking pan with parchment paper; grease parchment paper.
2. Heat oil and sugar in a small saucepan over medium heat, stirring constantly, until sugar is melted and mixture is smooth.
3. Add eggs, one at a time, stirring constantly after each addition. Stir in corn syrup, Bailey’s Irish Cream, salt, flour, baking powder, baking soda and cream of tartar.
4. Pour batter into prepared pan. Bake until a toothpick inserted into the center of the brownies comes out clean, about 25 minutes. Cool brownies in pan on a wire rack for 5 minutes; remove from pan to wire rack.
5. Cut into squares.
