There are few things as comforting as a knowing cake. Something that my mother never failed to make for birthdays or special occasions, banana cake has always been one of my kids’ favorites. At home, we make it just like my mom did but we also love our version of the best banana cake recipe that I’ve found.

To begin, we whisk together the sugar, eggs, and oil until completely mixed. Next, we stir in the mashed bananas and then the flour, baking powder, and salt. Finally, we fold in the English muffins until just combined.

Assembling the cake is a breeze. We simply pour the batter into a 9 by 13 inch baking dish and then sprinkle diced bananas on top. We bake the cake until a toothpick or cake tester comes out clean, about 35 minutes.

Once the cake is out of the oven, we let it cool for a few minutes before slicing and serving. My kids always devour this cake, inhaling every last bite. And I know that I can always count on it to take the chill out of any chilly evening.
