My kids love chocolate sunbutter cookies! I love that they are so easy to make and fairly healthy considering they are rich in chocolate. My kids really enjoy eating them and I know they are a hit with the adults too.

-1 cup (2 sticks) unsalted butter, at room temperature
-1 cup granulated sugar
-2/3 cup packed light brown sugar
-1 large egg
-1 teaspoon pure vanilla extract
-2 cups all-purpose flour
-1/4 teaspoon baking powder
-1/4 teaspoon baking soda
-1/2 cup sunflower seeds
-1/2 cup semisweet chocolate chips

-In a bowl, whisk together the butter, granulated sugar, brown sugar, egg, and vanilla extract. Mix in the flour, baking powder, and baking soda until well blended. Stir in the sunflower seeds and chocolate chips.

-Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
-Drop dough by rounded tablespoons onto prepared baking sheet. Bake for 12 to 14 minutes, or until cookies are golden brown and set. Let cool on baking sheet for 5 minutes. Transfer cookies to a wire rack to cool completely.
