Cookie Cupcakes that are So Soft and Delicious.

There was always one cupcake in the oven when I hit the kitchen in the morning, and it wasn’t because my mom liked to save them for later. No, Cookie Cupcakes were my favorite, and I would race to the oven to snatch one before anyone else could get their hands on it.

Butternut squash or pumpkin spice were my next-favorite flavors, but no matter what flavor I chose, I always thought of Cookie Cupcakes as my own. And even though they’re no longer the only treats in the oven, I still can’t help but crave them every once in a while.

Even though my family no longer celebrates Halloween, I can’t wait for the month of December because that’s when my mom starts baking up a storm and we get to indulge in all of her delicious treats. Everything from fudge crunch bars to red velvet cake cups to vegan elevator puffs winds up in our house during the month of December, and Cookie Cupcakes are always one of my favorites.
