A delicious, guilt-free Thanksgiving dish that is gluten-free and freezer-friendly – turkey pot pie.
As a child, I loved any and every Thanksgiving pie my mom made. There was always a gravy dish of some sort, most likely made with a combination of Brunswick stew, chicken broth, and a little flour. I also remember her making a fantastic gluten-free turkey pot pie. It was a creamy, custardy mix of ground turkey and arrowroot starch, with a layer of pumpkin puree on the bottom and a topping of shredded cooked turkey. Even now, I can smell that delicious pie baking in the oven, sending my childhood memories rushing back.
Sadly, my mom has not been able to eat gluten-free the past few years. Consequently, I am now the sole bearer of her gluten-free turkey pot pie recipe. And I am more than happy to do so. Thanksgiving is my favorite holiday, and I cannot imagine not being able to enjoy one of my mom’s traditional pies.
I have adapted her recipe a bit, adding in some arrowroot starch to thicken the mix and some extra pumpkin puree to reach that familiar textured top crust. I also rely on store-bought gluten-free pie crusts to make this recipe easier, but I still enjoy turning it into a Thanksgiving tradition of my own. Thanksgiving without mom’s turkey pot pie is like Thanksgiving without pumpkin Pie: not quite right.
