Delicious Raspberry Lemon Poke Cake Recipe.

My mom is the best baker ever. I mean it. She can turn out the most amazing raspberry lemon poke cake that is not only delicious but also completely hilarious.

My mom always has this crazy habit of videotaping herself as she bakes. You would think that by now I would have learned to be on guard against this, but no. I am always so amazed when I watch the video of her making this cake and she inevitably starts messing around with the ingredients.

For example, one time she put in way too much lemon juice and it turned the entire cake a funky pink color. Or last year she got a new set of instructions and decided to put the bowl of batter in the fridge instead of the freezer.

Anyway, needless to say, her raspberry lemon poke cake is always a hit. And this year is no different.

Just last week, my mom recorded herself making the cake and within minutes she was messing around with the whipped cream. First she tried to put it in the fridge but it didn’t seem to be chilling down very effectively. So she tried sticking it in the freezer for a little bit but then it started to freeze solid.

It was at this point that my mom just about lost it. You see, she likes her whipped cream to be fluffy and creamy and perfect all the time. And the whipped cream just wasn’t doing it.

So she ended up just going with what she had and making do with what she had. And I guess you could say that the end result was a little bit … messy. But still totally delicious and funny.
