Luscious Lemon Mousse Cake Recipe
Ingredients:
1 3-inch cake layer ( Rich Devil’s Food Cake)
1 cup granulated sugar
3 large eggs, beaten
1/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
1/4 cup semi-sweet chocolate chips
1/2 cup heavy cream
1/2 cup fresh lemon juice
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour one 9×13 inch baking pan.
2. Cut cake layer into thirds and place in prepared pan. Do not trim off any extra cake.
3. Beat together sugar, eggs and flour blend until smooth.
4. Combine baking powder, vanilla extract and chocolate chips and sprinkle over cake layer.
5. Pour cream over chocolate chips.
6. Squeeze lemon juice over cream.
7. Bake for 30 minutes or until cake is golden brown and a toothpick inserted into the center comes out clean.
8. Cool on a wire rack for 10 minutes before serving.
