Get These Black Cat Pumpkin Cupcakes.

I was walking home from grocery shopping a few days ago and I saw a cat crossing the street. It was so cute and I wanted to take a picture but I didn’t have my phone with me. I started craving pumpkin cupcakes so I went to my favorite bakery and picked up a batch. As I was paying, I saw a black cat walk by. I couldn’t help but smile and take a picture of the cupcakes with the cat in it. I knew my friends would love them and I was right- they were a big hit!

How to make black cat pumpkin cupcakes:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Line a cupcake tin with twelve cupcake liners.

3. In a bowl, mix together 1/2 cup (120 ml) black coffee, 1/4 cup (60 ml) oil, 1/4 cup (60 ml) brown sugar, and 1 1/2 teaspoons (7 ml) vanilla extract.

4. Pour the coffee mixture into the cupcake tin, filling each liner about half-way.

5. Bake for 15 minutes, or until the cupcakes are firm to the touch.

6. Cool the cupcakes in the tin for 5 minutes.

7. Remove the cupcakes to a wire rack to cool completely.

8. In a small bowl, mix together 2/3 cup (160 ml) pumpkin puree, 1/4 cup (60 ml) sugar, 1 1/2 teaspoons (7 ml) cinnamon, and 1/8 teaspoon (3 ml) ground ginger.

9. Frost the top of each cupcake with half of the pumpkin mixture.

10. In a small bowl, mix together 1/2 cup (120 ml) black coffee, 1/4 cup (60 ml) sugar, and 1 1/2 teaspoons (7 ml) cinnamon.

11. Place half of the coffee mixture over the pumpkin mixture on top of each cupcake.

12. Frost the top of each cupcake with the rest of the pumpkin mixture.

13. Notes:

-You can make the coffee mixture up to 2 days in advance and store in a sealed container in the fridge.

-The cupcakes will be best if served immediately, but will stay fresh for a few hours if stored in a sealed container in the fridge.
