Gluten-Free Baked Brie Pastry.

I never imagined growing up without gluten. I mean sure I’d heard about people who could’t eat it, but I always thought it was a weird food allergy or something. Then I grew up and started dating guys who ate gluten, and suddenly I was one of those people. And it didn’t just screw with my stomach- it messed with my head too.

Every time I had to eat gluten, I felt this internal conflict. I wanted to be like my friends and love food, but on the other hand I was really uncomfortable with the idea of eating something that was making my stomachache. I also didn’t want to be a walking advertisement for gluten-free baking, so I usually tried to go without it.

But eventually, I realized that I couldn’t just ignore my stomach. I had to figure out a way to make gluten-free baking work for me. And that’s when I discovered pastry.

Pastry was always my favorite food- I loved the way it smelled, the way it tasted, and the way it felt in my mouth. So when I decided to start gluten-free baking, I knew I had to make pastry my focus.

There was a lot of trial and error, but eventually I learned how to make gluten-free pastry that wasjust as delicious and satisfying as traditional pastry. And now, I can’t imagine going back to eating gluten-free anything else.
