I was born into a family of coffee drinkers. My mom, dad and older brother all enjoyed a cup of joe in the morning and sometimes at night as well. Growing up, I didn’t have a problem with java. In fact, I really enjoyed it.
Until I got diagnosed with coeliac disease.
At first, I was really scared. I didn’t know what coeliac disease was or how it worked. All I knew was that I couldn’t have coffee or anything with gluten in it.
My parents were really supportive of my decision to go gluten free. They gave me a book called, “It’s All True, Gluten Is Toxic” to read and they helped me to understand the disease better.
They were also really supportive of me continuing to learn about my condition. So, they enrolled me in a gluten free cooking class through the University of Illinois.
I really enjoyed the class. I learned about different gluten free breads, pastas and cakes. I even made a gluten free coffee cake that my friends and family loved.
It was a fun learning experience and I’m grateful for my parents’ support.
Now that I’m gluten free, I enjoy coffee just as much as my family does. I’m still a coffee addict, but now I know that I can enjoy my addiction without bringing wheat into the equation.
I still enjoy baking gluten free desserts, but I know that I can also enjoy them without worrying about gluten.
I’m planning to continue baking gluten free desserts and educating myself about the condition and all of the different gluten free alternatives. In the meantime, I’m happy to enjoy a delicious cup of coffee any time of day.
