The 4th of July was always a great day for my family and I. We would wake up early so we could get down to the beach with enough time to set up our picnic blanket, play some beach games like frisbee or just play with an inflatable ball.

When the sun would get too hot, we’d pack everything back up and head home. Later that day, we would have a small party at our house with friends and family coming over.

Here’s an Easy July 4th Cupcake Recipe

I had been working on these red, white, and blue cupcakes for weeks- planning out what recipe to use, how many cups of vanilla cake mix to buy and whether or not I wanted sprinkles or any other color decorations.

I told myself that they weren’t going to be anything too elaborate because it would tempt me (and everyone else) into eating them before reaching the party guests.

So today, I have been on my feet for hours, keeping an eye on the oven as these cupcakes bake. I love that they are red, white and blue to celebrate our Independence

Day tomorrow. They smell amazing and I can’t wait to see how they taste! When the timer goes off, it is time for me to add some frosting. This vanilla buttercream pairs so well with those sprinkles. The kids will love these at the party tomorrow!

Instructions

Cupcakes:

  • Friends, it’s time to get baking! Preheat your oven to 350F and prepare 18 cupcake liners.
  • In a medium mixing bowl, stir together the flour, salt, baking powder, and baking soda. Set aside – we’ll need those in just a minute. Add butter and sugar into a large mixing bowl (or stand mixer) until light-colored with no lumps remaining for 1-2 minutes on high speed or using an electric hand beater set at low power level; mix will seem fluffy when done properly.
  • Add vanilla extract to mixture of eggs then beat thoroughly before adding half the ingredients from our prep work earlier: this should only take about 30 seconds worth of beating since you’ve already mixed most of them well beforehand.
    Now add milk slowly and stir them thoroughly and after that, add the second flour mix and stir.
  • Add the sprinkles to the batter and mix well.
  • Pour the batter into muffin cups, filling each cup 2/3 of the way full. Put them in the oven and bake for 13-17 minutes or until a toothpick comes out clean. Remove from heat after time is up with care so you don’t burn yourself! Cool them down on the wire rack.

Frosting:

  • Once the cupcakes have completely cooled down, it’s time to frost them. Get a large mixing bowl and add the butter and beat about a minute until it’s fluffy.
  • Add 1 cup of powdered sugar to the butter. Mix them together. Add another cup of powdered sugar and mix it again. After that, mix in the remaining powdered sugar.
  • Add the milk, vanilla, and salt, and mix it well.
  • Place a piping tip and coupler on an icing bag. Fill the bag 3/4 full with frosting. Pipe the frosting onto the cupcakes.
  • Sprinkle your colorful sprinkles onto the cupcakes.

If your room temperature is hot and the frosting came out too soft, you can place it in the fridge about half an hour before you frost the cupcakes. is a little on the soft side (which is common during the summer months) you can refrigerate it for 30 minutes before icing the cupcakes.
