My kids adore gluten-free chai cupcakes. They adore all things cake, but especially ones that are flavored with chai spices. I get a kick out of watching them eat them – they practically inhale them.
I love that they enjoy something that’s different, and that the cupcakes are just the right consistency – not too hard, not toosoft. They’re perfect for a quick snack or dessert.
I usually make them with gluten-free flour, but sometimes I throw in a gluten-free oats powder for a bit of added texture. And of course, I always use my favorite chai spice mix – it’s simply Ceylon cinnamon, cardamom, ginger and black pepper.
