Love cookies? You’ll love these gluten-free double chocolate chip cookies.
When I was growing up, we always had gluten-free cookies in the fridge. My mom would preheat the oven and take out a batch of her famous double chocolate chip cookies, and they would be so good I could never just have one. Now that I’m gluten-free, I love to bake my own gluten-free cookies, and I can’t help but think of those childhood cookies whenever I do. I think it’s the combination of the fluffy, buttery dough and the rich chocolate chips that make those cookies so special. They’re definitely a favorite around here!
What are gluten free double chocolate chip cookies?
Chocolate chip cookies without any gluten. You can make them with either gluten-free flour, like sorghum, or gluten-free baking powder. Either way, the dough is mixed with semisweet chocolate, a touch of cinnamon, and some sugar, then rolled into balls. The cookies are baked at a moderate temperature, until they’re a nice, golden brown.
How do I make gluten free double chocolate chip cookies?
To make gluten free double chocolate chip cookies, you’ll need:
– GF flour (or sorghum)
– GF baking powder
– semi sweet chocolate chips
– cinnamon
– sugar
– butter (or coconut oil)
– eggs
– vanilla extract
To make the dough, begin by mixing together the gluten free flour, baking powder, and cinnamon. Slowly add in the semisweet chocolate chips and sugar, until the mixture is well combined.
In a separate bowl, mix together the butter and eggs. Add in the vanilla extract, and mix until everything is combined.
Once the dough is mixed together, place it on a piece of parchment paper and use a liberal amount of flour to gel the dough. It will be a bit sticky, so MAKE SURE YOU HAVE ALL THE FLour YOU NEED TO MAKE THE COOKIES.
Roll the dough out to 1/2 inch thickness. Cut out cookies with a cookie cutter, and place them on a baking sheet lined with parchment paper.
Bake at a moderate temperature for 12-13 minutes, until they’re a nice golden brown. Enjoy!
