Pineapple Coconut Cupcakes Are Bursting with Coconut and Pineapple Flavor!

My name is Lindsay and I am a baker extraordinaire. I have a serious love for baking and I make all sorts of cakes, cookies, and cupcakes. My latest creation is pineapple coconut cupcakes, which I declare to be the best cupcakes I have ever made.

I was messing around in the kitchen one day and decided to put some pineapple and coconut into my cupcake mix. To my utter amazement, the cupcakes came out absolutely fantastic! I couldn’t believe how delicious they taste and the combination of the two flavors is amazing. I was so amused that I decided to name the cupcake recipe after my favorite cocktail, the pina colada.

Q: How do I make the cupcakes?

A: Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with a silicone baking mat or a sheet of parchment paper.

In a medium bowl, whisk together the cake mix, 2 eggs, and 2 tablespoons of water. Pour the batter into 24 cupcake wells on the prepared baking sheet.

Bake the cupcakes for 15 to 18 minutes, or until golden brown and a toothpick or cake tester comes out clean when inserted into the centers of the cupcakes. Cool the cupcakes for 5 minutes on the baking sheet, then transfer them to a wire rack to cool completely.

To make the frosting, in a large bowl, cream together the coconut cream, honey, and vanilla extract. Add 1 cup of confectioners’ sugar, 1 tablespoon at a time, until the frosting is desired consistency.

Frost the top of each cooled cupcake with a tablespoon of frosting, then transfer the cupcakes to a serving dish. Serve immediately.
