When I was a kid, my family always went on family vacations to some of the most scenic places in the country. If we were lucky, we would stumble upon a farmer’s market. At these markets, we would buy fresh fruits and vegetables, and my favorite purchase was always a bag of sourdough shortbread cookies.

The best way to describe these cookies is that they are like little pillows of sugar, molasses and flour. They are tart and chewy all at the same time and so delicious. Just the smell of them baking in the oven would put a smile on my face.

After the dough is rolled out and cut out into small cookies, they are placed on a baking sheet and let them rise until they are almost doubled in size. Then, they are baked until they are a beautiful golden brown.

Once they have cooled, I store them in an airtight container in the pantry, where they are quickly gobbled up by me and my friends whenever we have a craving for something sweet and delicious.
