Spot-On Rhubarb Crumb Cake Recipe.

Grandma Bonnie loves rhubarb crumb cake. For as long as I can remember, she’s always asked for it at birthday parties. Though I don’t always have the most accurate measuring tools around, I know that the cake she requests is massive, and it always has a generous portion of the tart and sweet fruit layered between two layers of fluffy, tender cake.
I actually made this cake for her 90th birthday. She was so proud when she saw it come out of the oven and declared it the best rhubarb crumb cake she’d ever eaten. She’s been known to say things like that about a variety of recipes, usually followed by, “but there’s no way I’m ever going to make it again.” Needless to say, I’m always on the lookout for a good recipe to make for her, in the hopes that she’ll keep eating it long after her 90th birthday.
