When it comes to desserts my dad is all about the gluten-free route. So when I decided to get into baking I knew I had to include gluten-free baking into my repertoire. And what better way to start than with something my dad loves? I decided on gluten-free strawberry lemonade cupcakes.

To make these cupcakes I used an gluten-free flour mix, gluten-free baking powder, and bananas. I also swapped out the regular sugar for maple syrup, and used lemon juice and zest to give the cupcakes a slightly tart taste. Then I topped them off with a layer of ultra-fresh strawberries and a drizzle of creamy lemonade frosting.
