Who Knew? Funfetti Cookies are Better Than Regular Cookies.

I was just about to put the cookies in the oven, when I heard a knock on the door. I giggled to myself, thinking it was my little brother coming over to play. I got all the cookies out onto a baking sheet and put them in the oven, then got the milk and eggs from the fridge. I cracked the eggs and whisked them together, then added the milk and put the mixture in a pan to cook. I went to the door, but it was already open. I didn’t hear anyone come in. I cautiously went to the kitchen, where I found a note on the counter. The note said “Izzy, these are for you.” I put the cookies back in the oven and took the note to the living room. I unfolded it and found a letter. The letter said “Hi Izzy, these are funfetti cookies. I made them for you. I hope you like them.” I was so excited! I got a big smile on my face and started to cry. I wasn’t sure what to say, so I just put the letter back on the counter and went to the kitchen to start baking again. I knew my mom was going to love them (she loves anything with funfetti in it). I was so happy that my friend remembered my birthday and baked me cookies!

How to make funfetti cookies?

To make funfetti cookies: In a large bowl, mix together 1 cup sugar, 2/3 cup cornstarch, 1/4 teaspoon salt, and 2 eggs. In a separate bowl, mix together 1 1/2 cups all-purpose flour, 1/2 teaspoon baking powder, and 1/2 teaspoon baking soda. Add the flour mixture to the sugar mixture and stir until well combined. Stir in 1 cup (2 sticks) butter, 1 cup powdered sugar, and 1/4 teaspoon almond extract. The dough will be soft and doughy.

-Separate dough into 2 even batches. On a lightly floured surface, roll out each dough batch to 1/2-in.-thick circles. Place the dough circles on a baking sheet.

-In a small bowl, whisk together 1/2 cup rainbow sprinkles, 1/4 cupfinely chopped nuts, and 1 1/2 teaspoons sweetener. Sprinkle the sprinkles, nuts, and sweetener over the dough circles.

-Bake the cookies at 350°F for 8 minutes. Let the cookies cool on the baking sheet for 5 minutes. Transfer the cookies to a wire rack to cool completely.

-Store the cookies in an airtight container.
