If you’re new to the world of baking, or you’re just learning how to take your skills to the next level, frosting and decorating cupcakes can be daunting. Once you start piping, hold the tip of the bag about an inch above the cupcake surface at a slanted angle. Next, start squeezing from the top of the bag with one of your hands and use the other hand to help you guide the bag around the cupcake.

Go slowly and start by trying a basic swirl motion until you get used to more complex designs.

Consider disposable piping bags as an option when you’re playing around with different ideas; they make cleanup a breeze!

Keep Practicing

Though it’s not hard to frost cupcakes, it can take some getting used to. You have to get familiar with the way that you move around the cupcakes to make specific designs. That’s even more true for when you start doing some of the more intricate designs.

Gradually start going inward, until you get back to the point at which you would connect to close the circle.

Keep going until you reach the middle, where you would eventually end up with a small peak in the center of the cupcake.

Rosettes

Grab the medium star tip again and put more frosting into your bag. This time you’ll start in the middle instead of on the outer edge.

Start piping from the inside out until you’ve done a 360 around the outside of the cupcake.

Hydrangea Flowers

You can use a smaller version of the medium star tip with this one if you want to try a more detailed design. Start in the middle again after refining your bag. Create smaller dollops of frosting all around the top surface of the cupcake.

You should be holding the bag straight above the cupcake surface without slanting it. Make the dots small and relatively close to one another. You can also add more dots on top of the first layer if you want to add the element of height to your cupcake.

The Ice Cream Swirl

Switch out your star tip for the round one without designs. This method will be the same as the first; the only difference will be how it looks in the end. The first twirl has ridges, and this one is smooth without ridges or lines.

The “Artsy” Designs

This is the decorating method when you get to throw caution to the wind. Just grab a nearby spoon, scoop up a spoonful of frosting, and plop it on top of the cupcake.

You can smooth it out with a flat spatula or the tip of the butter knife. As you’re doing that, you can do a few swirls here and there or adjust the frosting how you want. You can also make it completely smooth and leave it as is.

Don’t slice to the stem because the goal is to get the strawberry to remain intact and cut at the same time. Cutting to the stem will cause it to fall apart.

If you wish to have mint chocolate ganache, take ¼ of a teaspoon of mint extract and add it to the mix. Stir your mixture until all of the chocolate has gotten melted by the milk. The result will be a glossy and smooth sauce.

Let the mixture thicken by allowing it to cool on the counter for a few minutes. Having a thicker ganache will give you more control over where it lands as you drizzle it over your cupcake.

Begin by whisking ½ cup water, ¼ of a teaspoon of tartar, and 1 cup of sugar in a saucepan, and be sure to bring it to a simmer.

Be attentive, being careful not to allow the caramel to overcook, as it will taste bitter if it does. As the caramel heats, spray some large wooden spoons with non-stick cooking spray and pin them to a stovetop with a heavy pan.

Be sure to put a layer of paper towels down on the floor under the handles as there may be some caramel that falls.
